In the west we use hard wood for cutting boards and soft steel for knives resulting in knives that tend to stay dull and cutting boards that’s last a lifetime. The reverse is common in Japan with hard 60+ Rockwell knives and soft Hinoki cutting boards. As well losing the glue joints and using perfectly straight grain reduces the chances of the harder glue joints damaging blade performance.
